10 Min Quinoa Tabbouleh

Super simple 10 min quinoa tabbouleh - it’s easy, it’s tasty and although not traditional - it hits all the right spots.


Authentic tabbouleh is made with super fine grain (#1) bulgur however I didn’t have that on hand - so I used tricolour quinoa instead.


What you need

½ cup quinoa

1 cup diced cucumber (1 small-to-medium)

1 cup diced baby tomatoes

1 teaspoon fine sea salt, divided in half.

1 medium bunches continental parsley

1/4 cup diced red onion

1/4 cup thinly sliced green onion

1/4 cup extra-virgin olive oil

Juice from 1-2 lemons.

First all - place 1/2 cup quinoa in a bowl with 1 cup of water - cover with cling film and microwave for 5 mins - then again for a further 4 mins or until quinoa has soaked all the water and is fluffy.

Next add your diced cucumbers and tomatoes into a sieve - and add 1/2 tsp salt - allow to sit while you. Hop your parsley.

Chop parsley - add onions and then add your drained off tomatoes and cucumbers.

Add your cooked quinoa.

.

Season with remaining 1/2 tsp salt, dress with olive oil and juice and you’re done.

Super easy and super delicious!
