A Warm Welcome.....




The cooler weather has truly arrived and if you're like me, and the thought of heading out after it gets darker makes you freeze from your head to toe, than this soup will warm you right up.


Its comfort in its own bowl, and its elevating that classic (almost boring) pumpkin soup to the next level!


Cooks in about 30 mins - and its so easy.


What you need

Soup

1 brown onion roughly chopped

1/4 pumpkin roughly chopped

1 large potato roughly chopped

1 red or green apple - cored - roughly chopped

1 ltr vegetable stock

1 tbsp EVOO.

Salt, Pepper and a pinch of ground nutmeg (optional)

Individual deep cob roll or loaf (see notes)


Toppings

Blue Cheese

Bacon Bits

Caramelised Onions.


Caramelised Onions

1 red onion thinly sliced

1 tsp butter

1 tsp EVOO

1 Tbsp Brown Sugar

1 Tbsp Balsamic Vinegar (or glaze)

Salt & Pepper to season


For the soup - add EVOO into a pan over high heat.

Add you veggies and apple and brown off until onions are slightly translucent.

Season with Salt, Pepper and Nutmeg.

Add your stock and turn to simmer - simmer for approximately 25 mins or until your veggies are tender.

Allow to slightly cool and blitz into a smooth soup.


While the soup is simmering - start on your caramalised onions.

In a pan, add your butter and EVOO

Add your onions, Salt and Pepper - cook until your onions are translucent.

Add your Balsamic Vinegar and Brown sugar - turn down heat and allow the sugar to caramelise.

Pull off heat and allow to cool.


Now while this soup is super easy to plate up in a bowl - i have opted for an individual bread roll - i have hollowed out the centre and i am left with the shell of the roll.

Pour your soup in gently

top with caramalised onions, bacon bits, and blue cheese - place under grill for 2 mins (max) just to melt the blue cheese.


Serve and Enjoy!!


The trimmings in this soup elevate this pumpkin soup to next level goodness - you will not be disappointed!!!


NOTE - Individual Cob loaves and gourmet sourdough loafs are available from specialty bakeries and in some Coles and Woolworths - if you can not find individual serving ones - you can serve this in a large Cob loaf or omit all together.
