The last time I attempted to make Hot Cross Buns was back in my year 8 home economics class - and I remember thinking hmmmm, nope, never again - however with this no knead - air fryer way - I couldn’t have found an easier way to celebrate Easter and to share the love with my little bunnies at home - and it’s minimal effort for big rewards. The hardest part of this recipe is proofing your dough… but if you want the fluffiest dough - do not skip this part.
What you need

1 satchel of instant dry yeast (7g)
1 tsp caster sugar
1/4 cup warm water
1/4 cup caster sugar
2 cups plain bread & pizza flour
2 tsp mixed spice
2 teaspoon cinnamon
1/4 tsp salt
1/3 cup sultanas
1/3 cup dried apples diced
25g butter
1/2 cup milk
2 free range eggs, lightly beaten
1 tbs apricot jam, warmed (or honey)
Additional 1/4 plain flour and 2tbsp for cross

Method
Place 1/4 cup warm water in a jug. Sprinkle over yeast and 1 tsp caster sugar, then stir until dissolved. Set aside in a warm, draught-free place for 5 minutes or until frothy.
Place 2 cups flour in a large bowl. Add mixed spice, salt and remaining caster sugar. Whisk to combine.
Stir through dried apples and sultanas.
Meanwhile, mix warm milk, melted butter and 2 eggs in a jug, and stir to combine.
Make a well in the dry mixture, Add your yeast and milk mixture with a flat bladed knife until a sticky dough has formed.
Cover with a clean damp tea towel. Set dough aside in a warm, draught-free place for 1 hour 30 minutes or until doubled in size.
Punch dough down and turn out onto a lightly floured surface.
Bring dough together and shape into a log. Divide dough into 6 portions.
Working with 1 portion at a time, shape into a ball.
Place ball, smooth-side up, into a well greased air-fryer basket.
Repeat with remaining portions.
Cover air-fryer basket with a clean tea towel and set aside in a warm, draught-free place for 1 hour or until risen.
For your cross
Mix 1/4 cup plain flour, 2 tbsp water and mix to a paste. Spoon into a reusable bag and snip off one corner. Pipe crosses on top of buns.
Bake buns in air fryer at 160°C for 13minutes or until golden. (They should sound hollow when tapped.)
Carefully remove buns from air fryer and transfer to a wire rack. Brush tops with warmed apricot jam (or honey).
Serve warm with butter and enjoy!
Tips - ensure your yeast is in date - if it isn't it will not froth.
For a more traditional hot cross bun, swap out the extra cinnamon and add mixed dried fruit and orange zest
For a chocolate bun - omit the cinnamon - add chocolate cocoa and throw in some milk, dark or white choc chips.
