Almond Croissant Cookies


Move over croissants stuffed with cookies - these legit taste like you’re eating an almond croissant - and are the bomb. 💣


Not healthy by any means and they can be made much smaller than I have made - but dunked into a cuppa - your afternoon tea will be made.


What you need

250g melted unsalted butter

1/2 cup light brown sugar

2/3 cup caster sugar

1 egg

1 egg yolk

2 tsp vanilla extract

185g plain flour

200g self raising flour

150g ground almonds

110g flaked roasted almond

icing sugar



Preheat oven to 200°c


Add your melted butter, light brown sugar and caster sugar to a bowl and mix until fully combined


Then add your egg and egg yolk, vanilla extract and mix till combined


Next add all your flours, ground almonds and fold until fully combined - it should be moist, not wet, but keep their shape.


Roll the dough into equal sized balls and coat in flaked almonds - pop in freezer for 15-20 mins and then pop in oven and bake for 20mins or until golden brown.

Allow to cool on tray - move to wire rack and sprinkle with icing sugar.
