Apple Berry Mini Loaves

Muffins are quintessential of childhood, and for good reasons. They’re versatile, mobile, delicious, and healthy too!These apple berry mini loaves are super delicious for a breakfast treat or a sneaky afternoon snack.


The balancing act of the tart berries and sweet apples hit the spot.... Weekend baking at its best... and in under 30mins you have the perfect treat.


What you need.


1 large egg

1 macadamia cup milk

1 over ripe banana

2 cups oat flour

1/3 cup maple syrup

1.5 tbsp baking powder

1.5 tsp vanilla extract

250g Blueberries (fresh or frozen)

1/2 cup diced fresh apple

1 tbsp cinnamon

1/2 Tspn cardamon


Preheat oven to 200°c


In a bowl, mash banana.


Add all your ingredients and mix together in a bowl till you have a batter. Do not over mix.

Pour into prepared mini loaf tins or Patty pan cups and bake for approximately 18-20mins until cooked through.


Allow to cool, serve with a dollop of Greek yoghurt or your favourite cream/icecream.


TIP: Oat flour is ground up rolled oats. This also works well if you prefer to use all purpose or wholemeal flour.
