Apple Pie Overnight Oats

If you love a healthy breakfast but don’t want to do a whole lot of work in the morning, overnight oats are the perfect pre packaged on the go type of breakfast for you.


It’s as easy as mixing together a couple of ingredients in a jar, placing in the fridge, and enjoying the next morning.


The base of these overnight oats is vegan and can spruced up and you can make them as simple or creative as you’d like. #theworldisyouroyster


For the base all you only need rolled oats,  milk, flaked almonds and chia seeds (nothing fancy)


This recipe can be made in bulk or individual servings and will keep best in the fridge for 3- 4 days depending on toppings.


Base

1/2 cup rolled oats

1/2 cup milk, dairy or dairy-free

1 tablespoon chia seeds

1 tsp Vanilla extract

1 tsp toasted flaked almonds


Apple Pie overnight oats

1 apple chopped

1 tsp Vanilla extract

1 tsp cinnamon

1 tbs brown sugar

1 tsp butter or dairy free butter of choice


To make the apple pie filling, simply peel and dice your apples.


In a pan. Add your butter, apples and stir.


Next add your cinnamon and vanilla extra.


Now add your brown sugar and let the apples bubble away on a low heat for approximately 5mins.


Set aside and cool.


The apples will release its juices to create a syrup with the brown sugar. Use some of this liquid to infuse your overnight oats. Stir this liquid though before topping with the apples.


Once your apples are on top. Cover and place in fridge to enjoy the next day.


Tip: Overnight oats can we served cold or warmed up in the microwave for a warmer breakfast.
