Christmas time is upon us, and this baked ricotta fits any antipasto board and the best part is, it's easy to whip up in no time.
What you need

500g tub smooth ricotta cheese
1 egg, lightly beaten
1/3 cup finely grated parmesan cheese
2 tsp thyme leaves
1/2 tsp chilli flakes
Crackers, to serve
Preheat oven to 200°C/180°C fan-forced.
Combine all ingredients into a bowl and mix thoroughly.
Season with salt and pepper.
Spoon into an oven proof dish.
Top with a sprinkle of chilli flakes.
Bake for 25 minutes or until golden and set.
