Banana Macadamia Nut Muffins with maple cream cheese frosting.

The best use of overripe bananas and you will not be disappointed.


What you need

4 over ripe bananas mashed

2 eggs

1 tsp vanilla

2 heaped tsp all spice

1 heaped tsp cinnamon

1 cup self raising flour

1/2 cup dark brown sugar

1/3 cup vegetable oil (or neutral flavour oil)

1/2 cup macadamias

Maple Cream Cheese Frosting

250g cream cheese (room temp)

50g butter (room temp)

1/4 cup icing sugar

2 tbsp maple syrup

Pinch of salt

.

Preheat oven to 200°c

.

In a bowl mash your bananas - add your eggs, oil and vanilla and mix well.

.

Next add your flour, spices, salt and brown sugar and mix thoroughly before folding through your nuts.

Pour into muffins pans and bake for 18-20mins or until golden brown, puffed up and cooked through (springy and bounce back to touch).

For frosting - mix all your ingredients and whip till combined and creamy.

.

Once the muffins are cooled - pipe your frosting - and decorate with a sprinkle of cinnamon and a drizzle of maple syrup.
