What happens when your brother in law gives you an abundance of fresh home grown basil? You make basil pesto with roasted cashews of course!

2 cups loosely packed Basil
1/2 cup Parmesan
1/2 cup roasted cashews
3-4 garlic cloves (chopped)
1/4 cup EVOO - (depending on how thick or runny you like your pesto add more or less)
Salt & Pepper to season

Blitz all ingredients in a food processor (except oil) until everything resembles a crumb like texture.
While the processor is blitzing, slowly drizzle the oil in, until desired consistency is achieved.

This mixture can be stirred through pasta, spread on bread or pizza bases, spread over roasted veggies or used as a dip on your charcuterie board.
