These super-easy broccoli steaks are a delicious meat-free meal option for brunch, lunch or dinner.
Broccoli is jammed packed full of nutrients and goodness and helps increase energy, glowing skin, healthier hair and nails but is great for;

What you need.
500g broccoli, thickly sliced (1cm / 1/2 inch)
1/2 cup brown rice and quinoa
1 small zucchini, sliced in thin ribbons
1 small handful of rocket
1 egg, poached (optional)
1 tbs EVOO
20g feta
1 tbs toasted flaked almonds
1 tbs dried unsweetened cranberries
Salt & Pepper
1 tsp Onion Powder
Prepare your brown rice and quinoa according to packet instructions. Set aside.
Drizzle your broccoli with EVOO, seasoning with salt, pepper and Onion powder, rubbing the seasoning in.
Heat a griddle pan and once hot, add your broccoli and flip once a char has developed on one side.
Once cooked. Assemble rice/quinoa, zucchini, broccoli. Sprinkle with almonds and cranberries, top with feta and poached egg.
TIP: Poached egg is optional BUT perfect for a brunch option.
Trade your flaked almonds for roasted hazelnuts.
Sprinkle "anything but the bagel seasoning" to add extra flavour.
