Too often I find myself craving my favourite cake of all time... The humble carrot cake but let's face it, it's not all that entirely healthy for you... So let me introduce you to these healthy carrot cake bliss balls.
They are bite sized, perfect to hit those cravings and they contain all natural and raw ingredients which is proven to increase your energy, get your skin glowing and improve gut health without all the nasties.
And did you know that sunflower seeds can be a powerhouse of almost all the vitamins and minerals that are essential for females during the time of their pregnancy and post pregnancy. Sunflower Seeds have a content of Folate which is essential for the production of new cells in the body. These little guys are refined sugar free, raw and easy to make! If you have a nut intolerance, or your kids want to take them to school, omit the nuts - it will not alter the taste or texture.

1.5 medium carrots
1/2 Cup oats
1/2 Cup sunflower seeds
Handful walnuts (optional)
3 large dates
2 tbsp coconut oil
1 teaspoon cinnamon
½ teaspoon ginger dried
Desiccated coconut for rolling

In a food processor, combine shredded carrots, oats, dates, seeds, walnuts (optional) ginger, cinnamon, coconut oil and blitz until a fine like crumb is made.
Using a tablespoon, scoop the mixture and roll into the palm of your hand to make approximately 1-inch balls.
Once rolled, roll the balls into in the remaining coconut to coat the outside (optional)
Store in the fridge in an air-tight container for up to 5 days (if they last)
