Zucchini's are in abundance at the moment in Australia and these fritters are a sure fire way to enjoy them and the added benefit is, they are healthy too.

Makes around 5-6 fritters (depending on size of eggs and the actual size of your fritter)

2 eggs
1/2 cup almond flour
1 zucchini grated
1/2 cup frozen peas
1 spring onion
20grams grated Haloumi
20grams grated tasty cheese
1 tsp fresh dill
Salt and Pepper to season.

Greek yoghurt to serve (optional)
.
Mix all your ingredients in a bowl to combine.
Prepare a pan and spray with cooking spray.

Once pan is hot, dollop your mixture and allow one side to set and flip once the underside is golden. Than cook until set on both sides.

Serve with a dollop of Greek yoghurt (and if on hand some fresh chives)
