Some nights, call for special dinners. A tasty dish for when you want a beautiful presentation, but don't want to jump through hoops to create it.
Breast chicken filleted, and flattened into minute steaks.
Thin slices Prosciutto
Mozzarella slices
Parmesean
Salt & pepper.

Lay Proscuitto down on bench, add chicken, season with pepper, add mozzarella slices, sprinkle with parmesean.
Roll up.
Preheat oven to 180°c - 200°c.
Add a drizzle of EVOO, in a roasting pan, place your Involtini in, add sliced garlic, arrange broccolini around chicken and add dollops of butter.

Roast chicken for 20-25 minutes until cooked through..

Serve with a mushroom cream sauce, mash potato and corn.
