Chicken, Zucchini and Halloumi meatballs

These chicken meatballs are something else. They are healthy, packed full of protein, super tasty and are easy to make.


What you need

500g chicken mince

2 medium zucchini's grated (squeeze and drain excess water)

1/2 cup peas

1/3 cup halloumi

1 egg

1 tbsp dried dill

1 tbsp fresh mint roughly chopped

2 tbsp garlic powder

Salt, pepper to season



Mix all ingredients in a bowl, shape into meatballs.


Prepare a pan with a light spray of EVOO


Add each meatball, turning through cooking go else golden and brown and cooked through.


Tip; these meatballs can be made into Pattie's for burgers, Kafta fingers for wraps, mini meatballs for finger food or meatballs served with a simple salad.


Please also note, that the mixture will be "wet" but don't fear. These will keep there shape when cooking.
