Combating Flu Season

Sometimes the simplest of ingredients make for the best comfort food and with flu season upon us, is easy to crave the biggest bowl of comfort.


Chicken and Veggie Soup #goodforthesoul.


1Ltr Chicken Broth

1 cup shredded chicken

1 onion diced

1 carrot diced

1 zucchini diced

1 potato diced

1/2 cup baby spinach

1/2 cup broccoli heads

1/2 cup risoni

1 tbs tomato paste

Salt and Pepper to season.


Add all your ingredients into a pot (excluding the risoni). Bring to the boil.

Once boiled, add your risoni and stir (cook according to packet instructions)


Serve - and enjoy.


TIPS - So this soup is pretty versatile and can withhold anytime of veggie of your choice - try adding in celery, mushrooms, pumpkin.

Serving Tip - Sprinkle with EVOO and some sharp Parmesan cheese.
