Serves 2-4 people
What you need

2 large potatoes - steamed and chopped
2 spring onions chopped
2 rashers crispy bacon
2 boiled eggs chopped
1/4 cup toasted slivered almonds
4 tablespoons sour cream
2 tablespoons mayonnaise
2 tablespoons whole grain seeded mustard
1 tablespoon dried dill (or fresh)
1 tablespoon chives.

Add sour cream, mayonnaise, whole seeded mustard, dill, chives, salt & pepper in a bowl and mix thoroughly.
In a separate bowl add your cooled chopped potatoes, toasted almonds, bacon, egg and spring onion. Pour over your creamy sour cream mixture and fold through. Sprinkle with more chives and serve.
