Christmas is the time for entertaining and these prawn rolls go down like a treat. They are simple to make, tasty and the perfect little appetiser if you are having people around, or serve for lunch.

500g red cooked prawns - peeled and chopped
2 spring onions chopped
Small Bunch of dill chopped
Small Bunch of chives chopped
1 tbsp caper chopped
3 tbsp sour cream
2 tbsp mayonnaise
1 tsp whole seeded mustard
Salt, pepper and a squeeze of lemon.
Brioche long rolls or sliders.
Mix all ingredients in bowl.
Divide amongst 6 rolls with rocket and serve.
