Perfect for breakfast, lunch or dinner this old fashioned favourite is sure to please no matter the time of the day.
This is such a good dish as it's made from everyday ingredients - which most of us always have on hand and is perfect to clear the fridge of the veggies begging to be used.
The ingredients can be mixed up to your taste buds and even accomodate the fussiest of all fussiest eaters. Any veggies can be added or you can keep it plain and simple.
It stores well in the fridge for a few days and can be frozen for later if you can't eat it all that quickly.
Ingredients:
1 ¼ cup grated Cheese
100g diced Bacon
1 Brown Onion sliced
⅓ cup Self-Raising Flour
Pepper, to taste
1 ½ cups thickened cream or milk
4 eggs
1 tbsp whole-seeded mustard
Preheat the oven to 200C and spray a pie tray or slice tray
In a small frying pan and cook the onion and bacon until onion is translucent. Allow to cool.
In another bowl, grate 1 medium zucchini and squeeze to remove excess water.
Combine zucchini, 1 cup shredded cheese, cooled bacon and onion mix, flour and pepper in a bowl.
Whisk eggs and milk and whole-seeded mustard together in a seperate bowl, then mix all ingredients to combine.
Sprinkle 1/4 cup shredded cheese on top.
Bake for 60- 70 minutes or until golden and cooked through. Serve warm or cold.
