Yes it’s Easter week, and I wouldn’t be me,
If I didn’t put a theme to at least one recipe this week…. So here are the cutest little bunny scones!
Whilst these little guys are super cute and super delicious they are super fiddly to cut open… (so a few breakages were to be expected) None the less, the taste so good lathered with jam.
What you need;
1 cup pure cream
1 cup lemonade
3 cup self-raising flour
pinch of salt
extra flour, for dusting
jam and cream, to serve
Preheat oven to 220°C (200°C fan-forced). Lightly flour a baking tray.
Sift flour and salt into a large bowl. Pour in lemonade and cream and mix to a soft sticky dough. Scrape onto a generously floured surface.
Knead very lightly and press into 3 cm thick disc. Using a cutter, cut dough into bunnies (or a shape of choice) and place on a baking paper lined oven tray. Gently knead scraps of dough together, repeat pressing and cutting.
Lightly brush tops with a little extra cream and bake for 15-20 minutes or until browned and tops are browned.
Serve with jam and cream. (Optional)

So for the health conscious who still want to indulge a little YOU CAN make these little guys using Greek yoghurt instead of cream, and sparkling water instead of lemonade… they work, they still taste good. They aren’t very sweet but they will hit that scone craving..
