Easy Healthy Fig & Walnut Pancakes.

1 ripe banana

2/3 cup oats

1/4 milk (plant or regular)

1 egg

1 date

Splash of Vanilla extract

Splash of maple (optional)

1 fig cut into slices

1/4 cup walnuts.

In a blender mix all your ingredients (except the fig and the walnuts)

.

Place a fig down on a prepared hot pan (sprayed with EVOO),

.

Pour pancake mixture over fig - allow the pancake to slightly bubble and the edges set slightly - flip… and continue cooking till done.

.

Toast your walnuts and serve on top of pancakes with another little splash of maple.

.

Figs atm are in season and are super sweet - so only a splash of maple required (or not 🤤)
