Christmas is around the corner and these festive scallops will not only wow your guests… they are quick and easy to make and definitely tasty…. After all it’s summer in Australia 🇦🇺
What you need
⬇️⬇️⬇️⬇️⬇️⬇️
Cleaned scallops with roe removed
Melted butter
Crushed garlic
Pomegranate jewels
Crushed Pistachio
Salt & pepper

Melt butter and add garlic.
.
Pat dry and season your scallops.
.
In a hot pan, spray EVOO
.
Add scallop on pan and allow to fry until slightly browned on one side 2-3 mins.

Flip scallop and brush with garlic butter mixture.
.
Once cooked and translucent remove from pan and placing back in cleaned shell.
.
Brush again with butter, sprinkle with pistachios and pomegranates and serve.
