Fig & Date Breakfast Bites.

Sometimes you need a breakfast on the go - and these fig and date breakfast bites are perfect for those crazy morning runs.

Gluten free and free from refined sugars these bites are packed full of fibre, full of protein and a good source of antioxidants that promote brain health and can be made in advance.


What you need.

6 dates softened

4 dried figs softened

1/2 cup peanut butter (or any nut butter)

1 cup oats

1 cup of chopped cashews

1/4 cup cranberries

1/4 cup sesame seeds

Pinch salt

Soak your figs and dates for 20 mins.

.

Add figs and dates with peanut butter in food processor to create a dough.

.

Add dough to remaining ingredients.

.

Meanwhile preheat oven to 180°c.

.

Place mixture into mini muffin pans and bake for 10mins till golden.

.
