Soup Season is upon us and this Anti inflammatory, immune boosting soup is not only packed full of nutrients, it’s quick, easy and healthy!!!
The turmeric and ginger will not only help reduce inflammation but it will boost antioxidants, makes skin happy, makes tummy happy but overall will generally be very healing to your body. #justwhatthedoctorordered
The cashews and cauliflower are what makes this soup so so creamy and the crispy chickpeas on top, give this the right about of texture.
2 tablespoons olive oil
half an onion, chopped
2 cloves garlic, chopped
1 head of cauliflower
1 cup cashews
1 tablespoon turmeric
1 tablespoon ground ginger
4 cups water
4 cups of stock (veg or chicken)
2 teaspoons salt
a squeeze of lemon juice (trust me)
**chickpeas for topping
Fry off all dry ingredients with olive oil. Once toastey and onion softened add your stock/water and simmer till soft.
Once cooked, blitz up.
For crispy chicke peas, lightly fry small canned of chickpeas in olive oil and sprinkle with salt and your favourite herbs (generally I would choose onion salt and priprika but tonight I opted for onion salt and rosemary.

Sprinkle chickpeas on top, with a drizzle of reallllllly good olive oil. And serve 👌🏼.
