Granola Cookies

Some days there is no time to make a wholesome breakfast or snack to get you through the day. These Granola Cookies are a healthy alternative to take on the run as you dash out the door, or to snack on when you're feeling a bit peckish. Perfect for a hike, or a post workout snack that's packed with vitamins, minerals and fibre - which is perfect for your digestional health.


What you need

1 cup oats

1/4 cup sunflower seeds

1/4 cup Pepitas

1/4 cup desiccated coconut

1/4 cup almond flakes

2 tbsp sesame seeds

2 tbsp chia seeds

1 tbsp cinnamon

Pinch salt

1 egg white

1/2 cup apple sauce/puree

1/4 cup sugar free maple (or maple or honey).

Preheat oven to 180°c

Combine all your dry ingredients in a bowl.

Add your egg white, apple puree and maple, and mix thoroughly.

On a baking sheet, add mixture in 7cm even rounds (or size of choice)

.

Bake for approximately 15-17mins - or until golden brown.

Drizzle with dark chocolate optional.
