Healthy Banana Blueberry Muffins

Some days call for simple cafe style muffins. Perfect for an afternoon cuppa. These little beauties take 20 mins to bake and they are packed full of protein due to the yoghurt content.


What you need:

1.5cups oat flour (or all purpose flour)

2 bananas

1 cup blueberries (frozen or fresh)

2 eggs

1/2 cup Greek yoghurt

1/2 cup brown sugar

1 tsp baking powder

1 tsp vanilla extract.

Pinch salt

Preheat oven 180°c

.

Mash your bananas and mix all ingredients in, folding your blueberries in gently at the end.

.

Pour into cafe style muffin cups (or whatever you have on hand)

Bake for approximately 20 mins or until muffins have risen and are set.

Tip: If Oat flour isn't your thing substitute with all purpose. Oat flour is a more grainy and nuttier texture with no compromise on taste
