Healthy Berry Bars

These Healthy Berry Bars are sweet, tart and perfect to pack away for a little snack, breakfast or sneaky dessert and not only that they are gluten and dairy free and vegan!!


What you need

BASE:

1 cup Almond Flour

1 cup shredded coconut

1.5 cups Oats

1/2 cup Maple Syrup

1/4 cup Coconut Oil.

A dash of vanilla extract

A pinch of salt.

BERRY FILLING

2 cups of frozen raspberries

1 punnet of blueberries

Juice from 1/2 Lemon plus zest

1/4 cup coconut sugar

TOPPING:

1/4 cup reserved base

1/4 cup oats

1/4 cup shaved almonds

1/4 cup shaved coconut

For the base, combine all ingredients and mix well. Reserve 1/4 cup behind for topping and press remaining mixture into a lined tin.

Blind bake for 10 mins. 180°c

Meanwhile in a pot, add all your filling ingredients until the mixture is bubbling and broken down. Set aside to cool slightly.

Add mixture on top of base.

In a seperate bowl, add your 1/4 cup of base mixture, oats, slivered almonds and some shaved coconut and mix together to resemble a crumble.

Bake for approximately 15- 20mins in a 180°c oven, or until the top is golden.

TIP: Raspberries are naturally filled with pectin which helps the filling set. If you’re using any other frozen Berry, you will need to add cornflour at the end of the cooking process to help the mixture set. 🫐
