Chicken, Chorizo and Cannellini Beans one pot dish. (Casserole call it, if you wish).
300g Chicken
1 chorizo diced
1 can cannellini beans
1 can crushed tomatoes
1 satchel tomato conserve
1/2 Zucchini diced
1/2 red onion finely diced
3 garlic cloves crushed
250m chicken stock
2 cup water
Fresh Basil
1/2 tsp thyme
1/2 tsp oregano
1 tsp sugar (depending of tartness of tomatoes)
1 tsp dried chilli
Salt & Pepper to season
In a pan, spray with cooking oil and brown off chicken pieces. Remove from pan once cooked.
In the same pan. Add a tbsp EVOO. Add garlic, chilli flakes, red onion, chorizo and cannelleni beans and stir till coated.
Add mushrooms and zucchini and stir.
Add tomato conserve to pan, and cook off slightly before adding crushed tomatoes, Stock, water, basil, thyme and oregano.
Add chicken and allow to simmer.
Serve with crusty bread (optional)
TIP: adding sugar is optional depending on the tartness of tomatoes.
