The humble salad, that’s packed full of flavour, it’s also packed full of fibre and a great source of plant protein.
With summer ramping up here in Australia, this is the perfect addition to your bbq meats or simply to have on its own.
What you need

Israeli Couscous (1/2 cup cooked to packet instructions)
1/2 Avocado
1 Cucumber
4 cherry tomatoes diced
Kale/baby spinach
Red onion
Feta
Toasted slivered almonds
Dressing
Drizzle of EVOO and
Pomegranate Molasses
Sprinkle of salt and Zattar
In a bowl, fluff up your Israeli couscous.
Add your salad items - tomatoes, cucumbers, avocado, red onion, feta and kale/baby spinach.
Mix and then stir through your toasted almonds.
Drizzle with extra virgin olive oil, pomegranate molasses and a sprinkle of salt with Zattar.

The pomegranate molasses adds a slightly sweet but tart finishing along with the herby flavour of the Zattar - it’s a beautiful and simple salad. So good!

Note: add 1/2 a vegetable bouillon to your couscous when cooking - it’s brings the couscous alive with flavour
