Mediterranean salad with homemade pita crisps

This fresh, healthy and easy salad will hit all the right notes this spring and I can not wait.


Made with fresh seasonal vegetables it's perfectly paired as a side dish or as a meal in itself.


Rich in flavorful ingredients including vegetables, whole grains, and heart-healthy fats, this Mediterranean salad is equal parts delicious and nutritious.


It’s also has a variety of benefits and may help support brain function, promote heart health, regulate blood sugar levels, and more.


What you need. (Serves 4)

Dice finely the following;

3 x Tomatoes

2 x Lebanese Cucumbers

1/2 Red Onion

1 x Yellow capsicum

1 x Red Capsicum

120g Feta


Next add a can of 180g chickpeas. (Or medium size can)

Season with salt & Pepper, drizzle with EVOO and red wine vinegar.....


Serve with homemade pita crisps***

.

For crisps. Slice a low fat pita wraps into strips. Spray with EVOO spray. Season with sea salt and put on oven rack (I use a cooling rack) and bake for 5-7 mins on 200°c until crisp and golden (watch these little guys as they can burn pretty quickly).


TIPS. Serve with white fish, salmon or chicken
