Mini Healthy Waffles

I'm not gonna lie, I am that morning person... You know the type, that loves a sunrise, goes for morning walks, the talkative type when all you may want is your morning coffee... yep that's me! But if you're not that morning person, I dare you to still be moody after eating these delicious waffles.

.

So easy, and probably half the ingredients are sitting in your fridge or pantry.

.

What you need.

2/3 cup oat flour (rolled oats blitzed)

1 small banana

1/4 cup any milk (i used macadamia milk)

1 egg

2 tsp baking powder

1 tsp ground cinnamon

1 tsp maple syrup

1 tsp vanilla extract

Pinch of salt.

.

Blitz all ingredients in blender till a smooth batter is formed and you're done! (That simple)

.

Spray your waffle iron, and pour a small amount of batter in the middle, close lid and let the magic happen.

Once cooked, Carefully remove from waffle iron and serve with berries, fruit, maple syrup, honey, jams, chocolate spreads... whatever you wish.

TIP: Now if you don't have a waffle iron, this batter is versatile and you can make pancakes instead. Win win in my books.
