One of the easiest pasta dishes you will ever whip up - it ticks all the boxes on flavour, budget and time.

What you need

3 Italian Sausages (these are pork and fennel) - Skin casing removed
1 large head of broccoli
1/2 red onion
2-3 garlic cloves
1 sliced chilli (deseeded)
1 cup chicken stock
1 cup grated Parmesan cheese
EVOO

Boil your orecchiette according to packet.

For sauce - in a pan, add EVOO - and break up your sausages.
Once sausage is crisping up, add your onion, chilli and garlic and toss around the pan.

Add your broccoli and stir around the pan to coat.
Once broccoli is coated, add your stock and stir - allow to reduce - add your Parmesan - then your cooked pasta - season with pepper only.

Allow the orecchiette to suck in the flavour - sprinkle with Parmesan and serve.

NOTE - You will notice I didn’t add any salt - there is plenty of seasoning in the Italian sausages, parmesean and stock, so you do not need the added salt. BUT do not skimp on the pepper. Pepper loves cheese and broccoli.
