Parmesean Crusted Zucchini Fries

Parmesean Crusted Zucchini Fries - baked not fried - These guys are a delicious alternative to your standard potato fries...


They are not only easy to prepare, they are delicious to devour with your favourite dipping sauce. (Or have alone)


What you need

⬇️⬇️⬇️⬇️⬇️


1 cup Panko crumbs

½ cup freshly grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon dried parsley flakes

salt and black pepper

Zucchini cut into wedges

½ cup all-purpose flour

2 large eggs, beaten

Preheat oven to 200°c

.

Cut zucchini into wedges

.

Mix Panko, Parmesan, Parsley, salt and pepper together.

In another bowl place your flour

In another bowl crack your eggs.

Now work in batches - dredge the zucchini in flour first, then egg than panko crumb.

Place on an oven cooling rack that been sprayed with EVOO spray over another tray to catch any unruly crumbs that may fall off..

.

Next lightly spray the zucchini with EVOO spray.

Bake for approximately 15-20 mins or until crumbs are golden brown.

Sprinkle with sea salt before serving.
