What you need

Salmon fillets
2 tbsp Dijon mustard
2 tbsp honey
1-2 crushed garlic
50g of pistachio kernels chopped
Small handful of fresh continental parsley
Lemon Zest
1/4 cup panko bread crumbs
Salt and Pepper
1 tbsp EVOO plus extra to drizzle

Preheat oven to 180°c
In a bowl, mix your Dijon mustard, garlic and honey. Set aside.

Separately mix your panko, parsley, pistachios, zest, EVOO and salt and pepper.

Place your salmon fillets in an ovenproof dish, and spoon over your Dijon mixture - next press your crust mixture and drizzle with an extra drizzle of EVOO.
Place in oven and bake for approximately 12-15 mins or until you’re happy with the cook of the salmon.

Serve with greens and smashed roasted potatoes.

NOTE - If you’re gluten intolerant swap your panko for almond meal.
