Prawn Noodle Stirfry

Some nights all I want is a quick satisfying meal. This ticks all the boxes. And the benefit of if all, it takes no time to prepare and cook, it's healthy, only uses one pan and did I mention it's delicious.

What you need

300g raw prawns

1/2 onion thinly sliced

1 cup shredded cabbage (optional)

1 cup diced capsicum

1/2 cup asparagus

2 Tbsp chilli paste (or 1 depending on desired heat)

2 Tbsp hoisin sauce

1 tbsp light soy sauce

1 tbsp water.

1 cup rice noodles (soaked and drained)

1 tsp sesame oil.

.

In a hot pan, add your sesame oil.

Add onion and cabbage and stir fry.

Add your chilli paste.

Add your prawns and stir to coat in paste. Once starting to turn a slight pink add your capsicum, asparagus and then your noodles followed by your mix of sauces.

Simmer till prawns are cooked through.

Remove from heat and serve.
