Prawn, Zucchini, Asparagus Tagliatelle

Some Friday nights just require, simple, delicious and easy meals that are easy to whip up using fresh produce and basic ingredients.

What you need

⬇️⬇️⬇️⬇️⬇️⬇️

Jumbo green prawns

Cooked Tagliatelle

1-2 large garlic cloves

1/2 Red onion

1 Spring onion

1 Birds Eye chilli

1 Zucchini

2 punnets of Baby tomatoes (I prefer grape)

1 bunch Asparagus.

Salt & Pepper

.

In a hot pan, add your aromatics - garlic, chilli, onion and spring onion.

.

Once fragrant add your zucchini and baby tomatoes and stir.

.

Add some pasta water to loosen up the mixture and creat a sauce like texture.

.

Once tomatoes are semi broken down, add your prawns followed by your asparagus

.

Once prawns are pink, add your cooked tagliatelle- simmer for 5 mins and serve.
