Quinoa Salad

One of the most versatile salads you can have in your repertoire. It that works well with all types of protein. Chicken and fish my favourites….


Best thing though, make in bulk (undressed) and it will keep well in your refrigerator for atleast 3-4days. #mealprepwinsagain

What you need.

1 cup Cooked and Cooled Quinoa

1 cup Chopped kaleslaw*

1 large Diced Cucumber

1/2 cup Diced baby grape Tomato (or tomato of choice)

1/4 cup diced Capsicum

1/4 Cooked Haloumi (optional)

2 tablespoons Toasted almonds

2 tablespoons Pepitas

Chopped Fresh mint


Dressing

Freshly squeezed lemon juice

EVOO

(Salt & pepper optional)

.

Add all ingredients into a bowl and mix well.


Note: If you are meal prepping. Don't add you EVOO, lemon juice or salt and pepper.


If you're enjoying straight away, Season and dress... and enjoy!
