Raspberry & Pistachio Friands

I love me a good friand, and while my local coffee shop, make great coffee, their friands seem to be cold, hard and almost stale like. So today I thought I’d whip some up. Always daunted by the fact these are little French cakes, I have never attempted them - but my gosh they were super easy to make with no fancy equipment needed..

What you need

6 egg whites

185g butter, melted

1 cup almond meal

1 1/2 cup icing sugar mixture

1/2 cup plain flour.

Preheat oven to 200°c

In a bowl whisk your egg whites till just combined. I just used a fork.

Next add your almond meal, plain flour, sugar and melted butter - mix with a wooden spoon till combined.

Pour into prepared pan. Sprinkle with chopped pistachios. I used a mini rectangle loaf pans, cos I couldn’t find my friand pans anywhere.

Bake for 25mins till golden brown.

Meanwhile for the raspberry gel. In a pan, mash 1/2 punnet of raspberries. Add 2 tbsp castor sugar and juice from 1/2 lemon. Bring to the boil, then simmer for 5 mins. In that 5 mins, prepare 1/2 a gelatine sheet. Once gelatine is ready, squeeze out excess water and add to your hot jam - whisking till melted. Set aside to become cool. (And ready for piping).

NB - Now this is a basic friand recipe, you can add any fruit, nuts, seeds, gels, curds or custards to the top. If you’re adding frozen fruit to the friand mix to bake, try and thaw the fruit to avoid bleeding into the batter.
