Sausage Roll Scrolls

Move over conventional sausage rolls and say hello to these sausage roll scrolls.


Now we won some beef sausages at a meat raffle on Friday night and while the easy option was to just do a bbq - these became the perfect lunch bite!


Packed with some hidden veggies - no one will ever guess.


The best part of making them as scrolls - you get a little bit of everything in each bite. It’s not just sausage and it’s not just pastry. Delicious in every bite.

What you need

2 sheets puff pastry (or low carb wraps)

4 fat beef sausages - skins removed

1/2 carrot finely grated

1 small zucchini finely grated

1/2 small brown onion

2 tbsp tomato ketchup

2 tbsp Worcestershire sauce

Pepper

1 egg whisked

In a pan, add a little EVOO and sweat off your onion. Remove and cool slightly.

In a bowl, add your beef sausages - removing the cases. Add your zucchini, carrot, onion and sauces and mix well.

.

Next on defrosted puff pastry, spread out your sausage mixture and roll.

.

Cut into desired size, brush with egg wash and bake for 30-35 mins or golden brown.
