It can be enjoyed both raw or cooked, and its low-calorie content makes it the perfect dish.

Zucchini has more potassium than a banana and has no cholesterol or unhealthy fats. It contains antioxidants such as lutein, carotenes, and zeaxanthin, which help slow down ageing.
100g of zucchini yields the following:
Vitamin A – 4% of DV
Vitamin C – 28% of DV
Calcium – 1% of DV
Iron – 2% of DV...

What you need
1 small Zucchini thinly sliced
Filling
3-4tbs ricotta
1 tsp Parmesan
Salt & pepper
....
Your favourite passata.

For the filling.
Mix your ricotta, Parmesean, salt & pepper in a bowl.
Meanwhile.
Thinly slice your zucchini into strips. Using a wide vegetable peeler works best.
Lay the thin slices overlapping each other. (4-5 strips wide)
Add a tsp or the ricotta filling in the centre of each zucchini and roll.
Add rolls on a layer of passata and add some more passata on top sprinkle with cheese and bake for 15mins in a moderately high oven (180°c-200°c)
