Slow Cooked Smokey BBQ Beef Short Ribs.

Lately I feel so time poor that slow cooker meals have become my lifeline - allowing a beautiful meal at the end of the day without the stress of cooking.

This meal, is tender - melt off the bone - and so delicious - you can prepare your own marinade however with so many great variations in the supermarket, I picked up a bottle of what I thought would work with the beef ribs. (And you can choose what you like that will suit the flavour profile of your families taste buds)

What you need

1kg beef short ribs.

Grillmates honey chipotle dry rub

Salt and pepper to season

1.5 cups beef stock

1 bottle of your marinade.

1 red onion

1/4 cup brown sugar

1/2 - 1tsp cayenne pepper

.

Preheat oven to 150°c

.

Dry rub your seasonings on your beef short ribs.

.

In a crockpot add EVOO and brown off your meat - next thrown in your onion and stir.

.

Add your stock and marinade - bring to the boil on your stove top.

.

Next move to your oven and allow to cook for 3-4hrs.

.

Gently remove beef ribs and place in an oven proof dish - cover with foil and set aside.


On stovetop, add 1/4 cup brown sugar a nd cayenne pepper and stir - Reduce liquid in crockpot for about 30mins. You should have a thick sauce.


Remove foil from ribs and baste with sauce. Pop under the grill until the ribs/bones start to char slightly.


Serve with baked potatoes and slaw.
