An easy, quick and delicious meal.. The salmon becomes flaky but juicy and is super flavourful.
What you need for marinade.
1.5 tbsp teriyaki sauce
1.5 tbsp hoisin sauce
1.5 tbsp rice wine vinegar
1.5 tbsp soy sauce sauce
1.5 tbsp sesame oil
2.5 tbsp brown sugar
.
To make marinade, mix all the ingredients in a large bowl.
.
In a seperate bowl add your salmon and half the marinade. Set aside for 20 mins to marinate.
.
In a tray, add your salmon, broccoli and capsicum or veggie of choice and bake for 12-15 mins. (180-200°c) until cooked to you liking.
.
While salmon is baking, transfer remaining marinade to a small pan and bring to a boil then reduce heat to a simmer and cook, stirring occasionally until slightly thickened (3-4 min) then remove from heat.
Once salmon is out of the oven, brush with teriyaki sauce, then sprinkle with chopped green onion and sesame seeds - serve with rice of choice.
.
TIP- If salmon isn’t your jam, try the marinade on beef or chicken and cook as per your preferred method.
