Some mornings I like to mix it up... and today was no different. These zucchini waffle fritters are easy, quick and a delicious start to the morning.

Makes 3 fritters.

1 small zucchini
30g tasty cheese
30g halloumi
1 egg
1/4 cup panko crumbs
Dill and pepper.
.
Mix well, spray your waffle iron.
Add a good spoonful of mixture. And cook.

You can shallow fry these as fritters if your don’t have a waffle iron.
.
Omit panko for regular breadcrumbs or if gluten intolerance almond meal.
.
Omit the tasty or halloumi for parmesean if you prefer. (Such a versatile and forgiving recipe)

Serve with a dollop of Greek yoghurt, chopped tomatoes and spring onion.
